DEFINITION
There are many definitions of terroir, for us this word means something more than a prestigious region or a Protected Geographical Indication, the terroir is what gives the wine its typiciy when it is made with lightest human intervention so that all the natural elements of a region can express themselves fully and without artifice.
CHARACTER AND TYPICITY
“The taste of terroir is for me the sum of the elements of nature that act in the ecosystem of a certain region, in our case Gualtallary and that sublimated by the man hand make possible the creation of a wine whose typicity and differentiating character it comes from its own roots.”

The sustainable work of the vineyard is carried out respecting the terroir, the environment and its biodiversity. The harsh Andean winters and arid summers of the upper Uco Valley, Tupungato, as well as the strong temperature range between day and night, naturally protect the vineyard against pests and parasites, so we could speak of a naturally ecological vineyard (in process certification)

RESPECT FOR THE VINE AND BIODIVERSITY
The cultivation of the vine is carried out without chemical inputs or pesticides. In addition, between the rows of vineyards a local plant is planted whose function is to contribute to biodiversity and provide the organic fertilizer the plant needs. The cultivation of rose bushes in each row also helps to prevent and alert about possible pests or parasites.
MICROTERROIR, MICROPOT, MICROVINIFICATION

The vineyard is divided into individualized parcels that are harvested separately to perfectly control the development and maturity of the grape in each sector, for this it is necessary to harvest by hand and select each grain at its best point of maturity.

The vinification work is done separately, since each sector produces a different wine. Thus, the micro-terroir of the dry river, composed of granite boulders and little soil, is different from that of the parcels of sandy soil with calcareous sediments.

Once the production process is finished, Philippe proceeds to the delicate final work, the blending that means the fusion of the different wines of the same type of grape or of different varieties (blend) elabotared in diffrent tanks and barrels.

The vineyards are rooted in a sandy, stony soil, with contributions of silt deposited on a subsoil of calcareous sediments. This alluvial structure with volcanic sediments is very favorable to drainage and vine cultivation. The vines planted in the bed of the Dryied river have a mineral microterroir formed by large granite stones.

The vineyards are watered with pure melt water from the snows of the Andes through a drip system that optimizes the care of natural resources.

Planted at 1,300 meters above sea level, the vineyards breathe the mountain air, being located on the west-east slope of the barrier of the Andes, the vineyards are sheltered from the clouds coming from the Pacific, so rainfall is scarce, about 200 mm a year.

The vineyard enjoys insolation for more than 320 days. The sun provides excellent ripening and concentration of the fruits that will give a wine generous in colors, aromas and fine and intense flavors.
