Ageing:
It is carried out in French oak barrels, medium toasting, for two years. To preserve the fineness of the grapes we minimise the use of wood so the barrels, are of third use.
Winemaking:
This wine comes from a vineyard whose particularity is to have been planted entirely in “pied franc” -selection made for the high oenological value of the vines-. The wine is made with grapes of three different varieties, harvested at full maturity (harvesting and selection of berries is done by hand) and is composed of a base of cabernet-sauvignon, merlot (5%) and malbec (5%) from our best plots in Gualtallary. This wine is only made when the quality of the vintage allows it.
The wide temperature range of this high altitude vineyard (1300 m above sea level) guarantees the natural acidity of the berries. This geographical location naturally allows us to practise a reasoned agriculture respectful of the terroir.
The terroir is sandy, on a subsoil of calcareous sediments in the case of Cabernet and Merlot and rocky in the case of Malbec (dry river plot). The yield, not very high in the vineyard, is 40 quintals per hectare.
Winemaking characteristics
The winemaking process involves long cold pre-fermentation phases, a 10% bleeding, a controlled fermentation and then a post-fermentation phase. All the winemaking is done separately with pumping over twice a day in a 2500 litre stainless steel tank. A part of the wine (cabernet, merlot or malbec) is made directly in 3rd use oak barrels, blended by hand during a long maceration of 4 to 5 weeks. Malolactic fermentation takes place naturally during the ageing in barrels.
Another particular feature is that no chemicals or tartaric acid are added to the wine, so the acidity of the wine is natural.
With all this care, from the selection of the “pie franco” prefiloxera plants for their oenological value, through the harvest and manual selection of the grapes at full maturity, which preserves the liveliness and intensity of the primary aromas of each selected vine, to the winemaking process, we try to express with our Reserva (Blend) wine all the potential of the Gualtallary terroir.
